S'mores Brownie Pie (Gluten Free).


Y'all. I have a problem. My sweet tooth is out of control. Last week, I toyed with trying to cut back on sugar. Saturday rolls around, and I just have to bake. These aren't healthy. I didn't even try. But I can tell you, they are delicious. And K said to definitely make them again - it's a winner. Here we go:


S'mores Brownie Pie
inspired by this recipe

Crust:
1 1/4 cups Honey Nut Chex crumbs
1/8 cup granulated sugar
6 tablespoons melted butter

Brownies:
4 tablespoons butter
4 ounces good quality bittersweet chocolate

3/4 cups granulated sugar
1 large egg
1 large egg yolk
1 teaspoons vanilla extract
1/2 cup gluten free all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 bag mini marshmallows

Preheat oven to 350 degrees. Line a pie pan with foil, lightly spray grease with spray or butter and set aside. For the crust, use the food processor to crush the Chex into crumbs. Melt the butter in the microwave. Combine the Chex crumbs, butter, and sugar in a bowl and then press into the bottom of the pie pan. Bake the crust in the oven for 15 minutes. [Note: After the 15 minutes, the crust will smell delicious, but look pretty wet. Don't worry. It will harden by the time the pie is done.]

For the brownies, use a double broiler to melt the chocolate and butter. Stir frequently as it melts. In a separate bowl, mix the egg, egg yolk, sugar, and vanilla extract together. Add in the melted chocolate and mix well. Add the flour and cocoa powder. The batter will be slightly thick but stir fast to mix it all together. Spread/press the brownie batter over the pie crust. Cook for about 25 minutes or until a toothpick comes out clean.

Turn the oven from Bake to Broil. Add marshmallows to the top of the brownie. Try to cover the top of the pie but don't worry about any open areas. The marshmallows will expand. Put the pie back in the oven and watch carefully until the marshmallows begin to melt and brown slightly. Don't walk away - this part goes fast!

Remove the pie from the oven and try to let it cool before you dig in! Enjoy!
